Four Vegetarian tortilla stacks to try!

If you haven’t seen this tortilla wrap trend or have yet to try it, I’m here to show you how it’s done! This is a fun and delicious way to stack ingredients into a tortilla and fold it up into one hot, crispy & delicious pocket of goodness. Yum!

Although I’ve put together 4 stellar vegetarian options, the possibilities are endless with this, so feel free to throw in all your favorite ingredients, get creative, and then tell me all about it!

FOUR VEGETARIAN TORTILLA STACK OPTIONS

1) SWEET BREKKIE – chocolate hazelnut spread, sliced banana, single ingredient peanut butter or almond butter, granola, sliced strawberries

2) CRUNCHY TACO

– sliced tomatoes, beefless taco crumbles {I used Y’ves soy taco crumbles}, corn tortilla chips, shredded monterey jack cheese, mashed avacado, cilantro {optional}

3) MARGARITA PIZZA

– pizza sauce, buffalo mozzarella, sliced cherry tomatoes, fresh basil & more mozzerella

4) GREEK SALAD

– hummus, sliced cucumber, diced tomatoes, sliced black olives, shredded cheese, feta cheese

INSTRUCTIONS

Start by cutting one slice in the center of your tortilla, half way up.

Add one or two ingredients to each quarter of the tortilla {as shown in the photo}. Fold each quarter over the other – ensuring you have alternated the cheese or sticky ingredient every other quarter, for maximum hold-togetherness….that’s a word, right?!

Enjoy as is, or if you want it hot and melty, and super yummy…and of course you do, place your folded wrap into a panini press, or grill press, or in a hot pan over the stove {cast iron pan is highly recommended}, or in an air fryer. While it cooks, press the wrap down firmly using a spatula and gently flip it once halfway through cooking time. You don’t want to handle it too much, as the ingredients may start to fall out.

Depending on what ingredients you added, the cooking time will vary. Once hot, crisp and the cheese has melted, it’s ready! Serve as is, or try it with some dipping sauces, like buttermilk ranch dressing, salsa, greek yogurt, sour cream…etc.
